Hi, i'm Kit. I'm a roboticist / mechatronics engineer. Selection of BLDC is based on it's torque and number of poles (besides speed and voltage). PID is not required to control speed as BLDC is frequency driven. The higher the frequency, the faster the motor runs. A varying load affects the current drawn, higher load will draw more energy. Most of the time, control system like PID is used to control the position of rotor using sensors like hall effect or rotary encoder. Otherwise, these sensors gives you speed reading feedback to ensure you are running at right speed. In the case if the load is more than the motor torque rating, the motor most likely will 'skip' some poles causing the motor to vibrate or run inconsistently.
