Hello I'm an electronics engineer with 10+ years of experience including Arduino, ESP, STM, and Raspberry. A doubt that Raspberry is the best solution for the task. I has very limited input reading speed and too powerful for the task. I would consider a $100 PLC with Ethernet connectivity if control need. Or a suitable USB adapter for the sensor to read the data directly to the PC Best regards, Dennis

I'm a UK developer of 20 years experience and have worked Pi's and other other embedded commercially. I have a range of sensors (temperature, moisture, etc., analog, digital, single wire etc.) here that will likely match your sensor input with calibration for scale during testing. If possible it would probably work best for me to initially supply a capture executable you can run to gather a real world sample data to a text file while I work on server to send it to computer. How do you want to capture it on your computer - do you want text, excel or inserted into database? Are you using raspian or some other OS? Which Pi are you on? What network connectivity are you using? (I would always suggest buffering at that sample rate to ensure no packet loss over the wire, but be useful to know if device will be off network for extended periods.)
