I propose to make a dedicated PCB for your application with ESP32 WROOM32 module and the required functions you need for counting. To do so, I propose several steps of development after Specification is written and agreed: - Electronic board dev (schematic/layout) - Building prototypes (x3 boards assemblies) - Code for Firmware (maybe you will like Arduino - anything else is possible ) - Code for Cloud function / Javascript web function Having IoT device built and tested, I will provide then you the full code for sending and collecting data to/from cloud (cloud solution to be clarified - I propose Google Firebase as a standard). I have alerady a full framework developped for IoT for data logging. Let's work together :-) Some preliminary remarks on description: Clarification may be required concerning the relays (don't understand if you control something with those relays or is it is used as a sensing input) - maybe there is someting more simple we can propose.
