If you have not only all mass, but also distances moved after collision and initial velocity's of vehicle - it can be done very quick calculations.
It's not give you exact number, because of type of: materials in a car(is it hard or soft have different quality to deform), point of impact, respective centers of mass for each vehicle, type of surface and it conditions(bumps,hot, cold, wet,etc), a lot of variations can change calculations results.
But if you wish estimation and not exact value, then it is possible to calculate with assumptions and after neglect some of interactions. Like make it just by Newtons laws and get raw estimations.
