Need Help with BLDC Outrunner Motor Design/Consulting

We are looking to prototype a BLDC outrunner motor. We would like to use standard stator diameters from JIAYE Stator. We are leaning towards the 80mm stator with 30-35mm of height. This is where your work would come in :) We have made some 3D Models of the motor but need to determine the starting specifications so we can have the stator constructed and would by JIAYE, the magnets ordered, and the rotor as well as stator core produced ( which we will likely do this in-house at our machine shop). For the stator, we still need to make determinations on the material, final dimension and tolerances, final height, and the lamination process For the winding we still need to make determinations on the winding scheme, wire types, wire diameter, winding turns, coil height, wire connector soldering or not?. and the need for a coil impregnation varnish coating or not. For the rotor, we still need to determine magnet size, air gap, magnet shape, magnet rating, and potential magnet sourcing. We have been testing a few hobby spec brushless outrunner motors and have a general idea of the general specifications and performance we would like to see. From these tests, this is how we found results that suggest an 80mm diameter and 30-35mm height stator with 0.2mm lamination height would be our starting point for the design. Our goal is to have a 30-40KV value and be able to handle a higher voltage lithium-ion battery system (somewhere between 12-16S, or 43.2V - 57.6V nominal). Great Torque is our biggest goal.
