I need an excel expert

I need to create a matrix for grading pigs to create and invoice. I would like to be able to select the supplier from a drop down box. I have included a template of an invoice that was created as an example the levy and swine duty are constant at the moment but need to be able to be changed if there is an increase. I also need to be able to add transport as a description. We copy and paste a kill sheet into the template. From the kill sheet I need the information to be sorted by type, eg female, male, castrate, sow, gilt, boar, sucker I need to be able to select a weight range , a P2 range and also a price/kg for example female 0kg - 300kg P2 0 - 40 and put this on the invoice So for each kill sheet it might look like there are 30 female pigs weighing up to 60kg and P2 up to 14 are $3.00/kg I also need a total weight for the 30 pigs then 30 female pigs over 60kg and over 14P2 up to 15P2 are $2.80/kg need total weight ect I also need total number of pigs per catergory eg female, male, etc. for the levy and swine duty. I need the weight ranges and P2's and prices to be variable for each invoice eg one farmer might have pigs 60 -90kg P2 14-16 $3.00 then greater than 90-100 P2 14-15 (eg 90.2kg 15P2)I need to have multiple ranges for each catergory. Sometimes we don't use a matrix just a flat price also.
