I've realized a greenhouse LED control system that's quite close, it uses ESP's and has a WEB interface.
However also an UNO R3 could be fit; my only concern is that there will be a lot of wires that could have false contacts, especially in an hostile environment, hence making the system unstable.
Therefore my advice is to produce also a PCB, that's not expensive, with an Arduino Nano/Micro and with swappable connectors so if a sensor fails you can easily replace it. Also you'll get a working system with no issues with cabling, soldering etc.
I Already have the sensors of temp/humidity and I2c display (albeit is 20x2 lines) , also I have optoinsulated relay modules so it will be easy to realize a prototype.
If you deem the proposal interesting we can discuss your needs in order to be 100% sure that I've got all the requirements, also beware that realizing the PCB, mount and test it will require time.
